Believe it or not, the holiday season is upon us, and Four Seasons Resort Maui at Wailea is kicking off the festivities in collaboration with Wally’s Wine & Spirits, sommelier Christian Navarro’s destination Los Angeles wine and spirits shop and restaurant (now with an outpost in Las Vegas). Wally’s #FSMaui Pop-Up will offer special wine-pairing dinners on the Friday and Saturday after Thanksgiving (11/26 & 11/27), as well as whisky and tequila tastings each night and a Champagne brunch on Sunday, 11/28.
Navarro, a longtime partner of the resort who curates the wine menu for the property’s Elite Suites, will be on hand for the event with a few of his favorite winemakers, including Napa’s Marciano Estate (the Marciano brothers are Wally’s co-owners) and Paso Robles’ Aleksander. Ryan Kluver, Wally’s executive chef, will offer menus designed expressly for pairing with featured wines.
Friday’s Marciano Estate Wine Dinner menu will include Wally’s signature Roasted Heritage Gallus Brun Bone-In Chicken, Truffle Pizzetta, and Wagyu New York Steak alongside winemaker Morgan Maurèze’s award-winning Estate Blanc and his complex M Proprietary Blend, among other wines.
Saturday’s Aleksander Wine Dinner menu will center around Wally’s classic Grilled Spanish Octopus, Wood Oven-Baked French Sea Bass and Burgundy Truffle Cream Pasta, all perfect pairings for small-production wines by two-time NBA Champion Sasha Vujacic, his brother Al, and their winemaking family.
There will be two seatings for each dinner, at 5pm and 8pm, and running simultaneously, from 5-11pm, will be the Starlight Lounge, where you can taste whisky, tequila, and craft cocktails highlighting The Dalmore and El Cristiano (the latter for which Navarro is a founding consultant).
Wrap up this decadent weekend with Brunch & Bubbles on Sunday, featuring a menu designed by Andrew Whiteside, the resort’s executive sous chef, accompanied by Laurent-Perrier Champagne. Fresh-Shucked Oysters & Pearls (caviar), Shakshuka Eggs, and Duck Confit Potstickers are all part of the lavish spread paired with the classically elegant Laurent-Perrier La Cuvée NV, Cuvée Rosé NV, and Ultra Brut NV.
Resort Sommelier Brendan O’Leary says of the intimate series of events, “I’m so excited not only to introduce our guests to some exceptional brands and vintages, but also to give them the opportunity to connect with the world-class vintners and distillers who will be joining us.”
